Valentine cocktail

Valentine’s Day is just around the corner, so do your shopping this week and prep something special for your sweetie, or for yourself and a few of your besties – who says Valentine’s is just for couples? And who says you have to stick to straight champagne or a glass of wine?

We’ve rounded up some easy to mix cocktails that are just right for romance. Go for organic juices, and shop for locally produced or organic liquors to make your beverages as eco-friendly as possible, then serve ‘em up in some great recycled glassware.

Chocolate-Lovers Margarita

  • 3 ounces chocolate milk
  • 1 ounce white tequila
  • 1 ounce strawberry puree (use frozen organic berries!)
  • Chocolate covered strawberry

Combine chilled chocolate milk, tequila and strawberry puree in a cocktail shaker with some ice. Shake vigorously then strain into a margarita glass and garnish with a chocolate covered strawberry.

French Cosmo

  • 3 ounces pineapple juice
  • 1 1/2 ounces vodka
  • 1/2 ounce crème de cassis
  • Pineapple slice or leaf

Combine pineapple juice, vodka and crème de casis in a cocktail shaker with ice. Shake vigorously then strain into a chilled martini glass and garnish with a pineapple slice or floating leaf.

Saint Valentine

  • 2 1/2 ounces vodka
  • 3 Strawberries (cored)
  • 1 Celery leaf (size of a thumb)
  • Splash lime juice
  • Rose petals.

Pour vodka, strawberries, celery leaf and lime juice into a cocktail shaker and muddle well (don’t have a muddler? Use a wooden spoon). Shake with some ice to finish and strain into a chilled martini glass. Garnish by floating rose petals in the glass.

Blood Orange-Pomegranate Mimosas

One for a group, and perfect for brunch!

  • 3 cups chilled blood orange juice (use regular oranges if you can’t find blood oranges)
  • 3 cups chilled pomegranate juice
  • 1 750-ml bottle chilled sparkling wine or champagne
  • 1/2 cup pomegranate seeds

Combine orange and pomegranate juice in a pitcher, then pour out into 10 flutes and top with sparkling wine. Garnish with a sprinkle of pomegranate seeds.
