That depends on what kind of sushi you’re making, but whatever it is, figure anywhere from 6 to 10 pieces of sushi for each of you.

For a home party, don’t try to bring home the entire sushi bar. Stick with a small selection of easy-to-prepare choices and please-almost-everyone classics. If you make your sushi a few hours ahead (shhh! we won’t tell) make sure you remove it from the refrigerator about 15 minutes before serving so the fish and rice can come to the right temperature.
